Summer is the time I thrive in the kitchen — I have so many recipes I’ve been documenting to share with you! The first one is this EASY peach & burrata salad! I’ve made this for friends and family and it’s always such a huge hit! I love to get cherry tomatoes and either peach or nectarines fully in season — those combined with basil, lemon juice and a thick balsamic glaze drizzled over the top makes for the prettiest, most colorful presentation and it’s MOUTH WATERING! The balsamic reduction glaze is KEY here — don’t plan on using balsamic vinegar, it won’t be the same. Balsamic reduction is thick like a syrup — Trader Joe’s has a great one and Fresh Market has my favorite! If you don’t have either of those by you, here’s a balsamic glaze you can buy online!
I love pairing this as a side dish to lemon pepper chicken and pesto pasta or as an app when we’re having people over!
