@christinatarabishy Mediterranean Orzo Pasta Salad, this is super similar to the one at Whole Foods in the prepared foods section! #pastasalad #easyrecipes #summerfood

WHAT YOU NEED:

- 2 1/2 cups cooked orzo
- 1 cup fresh spinach
- 1/2 cup roasted peppers
- 1/3 cup red onion
- 1/2 cup chickpeas
- 1/2 tsp oregano
- 1/4 cup olive oil
- 2 tbsp balsamic vinegar
- 2 tsp dijon mustard
- 1 tsp honey
- 1/2 tsp garlic powder
- salt & pepper to taste
- OPTIONAL ADD ONS: feta cheese, lemon juice and pine nuts

WHAT TO DO:
- Start by cooking the orzo according to package. Drain and set aside in large bowl.
- While pasta is still hot, add in fresh spinach and mix together to lightly wilt the spinach leaves.
- Add chopped red onion, roasted red peppers, basil, chickpeas and dried oregano
- In a small jar, mix together olive oil, balsamic vinegar, dijon mustard, honey, salt, garlic powder and black pepper. Whisk to combine.
- Pour dressing on top of orzo and mix it all together.
- When serving, add in optional feta cheese, pine nuts and fresh lemon juice.
